They milk cows, garden, ranch and cook among other things. This cookbook was written as a guide for the cooks and as a graduation present for the seniors to take into the world. The recipes are the basic kinds of foods one would expect in a boarding house situation, but elevated by this author-chef. The recipes are geared for se I really liked this cookbook because of the story behind it.
The recipes are geared for servings however, some include the quantities needed to feed the people at the school. That can come in handy when feeding a crowd. The recipes use real food, including the organ meats because the school grows most of its meat and produce. The book is huge, lacking in pictures but rich in content.
A kitchen would need no other book.

My complaints are that the variation of the recipes are written in a much lighter text. That makes it a tad difficult for these older eyes. Also, many recipes require the flip of a page to see the whole thing. Plan on mucking up the pages if using this book in the kitchen. Recipes for Whole Grain Health. I received this cookbook for my birthday recently, and, while I have not gotten very far into the recipes, what I have tested so far has been, for the most part, extremely good. The meatloaf is a revelation-- best recipe I have ever tried, and my new staple. It displaces the Martha Stewart meatloaf I've been making for years by a mile-- who knew yogurt yes, yogurt would be so awesome in meatloaf?
White Bean Soup
Just last night, I tried the egg pizza, which isn't even a recipe, really, just a suggestion. Try cracking eggs on top of a pizza I used a Kashi roasted vegetable one in the last six minutes of cooking. It creates a "soft boiled" effect, where the white is just set and the yellow is still runny. Takes a fork messy! The parsnip soup with toasted almond olive oil is also delicious. I didn't give five stars, on account of the spoonbread.
Again, I haven't tried many things yet, but the spoonbread was a crashing disappointment. It looked lovely, but was completely bland. I have a Southern Living recipe that is considerably better. The book itself is lovely to look at-- no food pictures, but the typeface is appealing and the quality of paper is very nice in the hand. I realize that's not important to everyone, but I enjoy having a good quality book. Also, the anecdotes throughout are very interesting.
There is also information about soapmaking, and how to make butter. There are several recipes for chili, including a couple of vegetarian versions. I think perhaps the black bean chili will be next on my list to make I love this book. I'm even more excited to know a new "Deep Springs Cookbook" will come out this year!
It keeps getting better. This book is a welcome change from the usual TV celebrity driven, marketing hype books about food and cooking that seem to prevail these days. The author, a trained chef, was also a student and cook at a tiny college set in the high desert of California, a college known for its comprehensive approach to education.
The focus in the book is on good, solid food, and recipes that don't require exotic ingredients or overly complex procedures. I've tried quite a few of the recipes and all have been good to excellent.
